Recipe Ingredients

1-1/4 lb.
extra-lean ground turkey
1/2 cup
panko bread crumbs
1/4 cup
Bob Evans® egg whites
1 Tbsp.
sesame oil
2 tsp.
grated fresh gingerroot
2 cloves
garlic, finely chopped

green onions, finely chopped
4 cups
mixed baby salad greens
1/2 cup
torn fresh cilantro leaves
1/2 cup
torn fresh mint leaves
1/4 cup
seasoned rice vinegar

Instructions

Heat grill or broiler to medium-high heat. Gently mix all meatball ingredients together in a medium bowl. Form into 1-1/2 inch meatballs; thread onto skewers. Grill about 8 minutes or until no longer pink in center.

Meanwhile, place greens and herbs on plates. Mix vinegar, soy and oil. Top greens with meatballs; drizzle with dressing.
